Commercial kitchens are constantly bustling as chefs create their culinary artistry in an environment full of heavy grease laden vapors. When a commercial restaurant is not regularly maintained, these food grade fats, oils, and grease can cause fires
and environmental issues. Our environment is extremely fragile, and we all must do everything we can to protect it. Our team understands that the work we perform can directly impact the environment. That’s why, here at Performance Industrial, we protect the environment every day while performing our work. Here is how we do our best to protect the environment.
Environmentally Friendly Products
Kitchen Exhaust Cleaning
Grease can be troublesome for kitchen exhaust cleaners because the grease laden vapors caramelize in the exhaust system from the high temperatures and sugars used during the food preparation. The build-up of fats, oils, and grease in kitchen exhaust systems ductwork can be heavily grease ladened. The use of high-quality chemicals are required in order to remove the grease. Kitchen exhaust cleaners are certified technicians
who are trained in the safe use of these chemicals. Companies that use chemical cleaners face a broad range of risks becauses these degreasers can contain carcinogenic solvents and corrosive compounds that can be hazardous if not handled properly, and can cause burns to the skin or lungs.
While the cleaning chemicals should be strong and effective, Performance Industrial makes it a priority to use chemicals that are safe for our technicians and for the environment. That is why we use Uncle Oscar’s
F.O.G Control products when we clean. This brand produces a safer, more environmentally friendly product than some of the other choices on the market. The natural amino acids, peptides, and proteins in Uncle Oscar’s F.O.G. Control formula help to mitigate the effects of high pH and reduce the amount of airborne caustic when the solution is sprayed. Plus, it’s water-based, biodegradable, nontoxic, and non-carcinogenic – all great things for our environment!
Fats, Oils, and Grease
Fats, oils, and grease (FOG) are also a byproduct of cooking foods. Establishments like restaurants are a prime source of FOG, which can pass through to the sewer system during cleaning processes. At high temperatures, FOGs can easily enter sinks and drains. When this FOG cools however, it solidifies, blocking and damaging sewer pipes. This ultimately leads to pollution in our waterways and environment. Our certified kitchen exhaust cleaning
professionals can help keep grease out of sewer systems and keep your business in compliance.
Indoor Air Pollution
The Performance Industrial team cleans the FOGs out of the kitchen exhaust system, including the hood canopy, exhaust ducts, and the rooftop kitchen exhaust fan. Every time we clean a kitchen exhaust system, we are protecting the environment.
When kitchen exhaust systems are not maintained or not cleaned down to the bare metal, the FOGs begin to build up
which can cause indoor air pollution. Kitchen exhaust systems perform an essential function, they draw air out of the commercial kitchen. When left unclean, the air flow will be diminished and the important function of drawing out air will become inhibited. This pollutes the indoor air with fats, oils, and grease particles, which isn’t good for employees and patrons.
Rooftop Stormwater Protection
Kitchen Exhaust Cleaners often come across rooftop grease contamination. This can occur when kitchen exhaust systems are not maintained, and a proper grease containment system is not installed. As the air pulls through exhaust ducts to the termination point (the kitchen exhaust fan on the roof), grease will also transfer with it. The grease will discharge from the kitchen exhaust fan and pool onto the rooftop. When left untreated, this grease will wash down to the storm drains and into the stormwater systems.
Performance Industrial can install a grease containment system that will help contain kitchen exhaust fan discharge and keep FOGS from entering the stormwater systems.
